Chocolate Covered Strawberries With Chocolate Chips

These chocolate covered strawberries, made just with chocolate chips, are an easy, decadent treat for Valentine’s Day or romantic dinners in!

Every February I see overpriced chocolate covered strawberries pop up in grocery stores.

With thick chocolate hardened on the outside of sweet fruit, these classic strawberries can be tempting to buy. But did you know you can make your own at home for a fraction of the price?

Homemade chocolate covered strawberries feature rich semi-sweet or dark chocolate and are the perfect holiday dessert. This bite-sized desserts are easy to make, inexpensive, and make for a beautiful display on a dessert tray.

This is our easy, kid-friendly recipe that has requires only 2 ingredients. This impressive, yet simple, dessert will charm kids and adults alike! 🙂

Ingredients

  • 2 pounds strawberries
  • 1 12-oz package semi-sweet chocolate chips: Use high quality chocolate chips like Ghirardelli or Baker’s chocolate

Tips

  • The chocolate will not stick to wet strawberries. For best results, make sure the strawberries are completely dry before dipping in the melted chocolate!
  • Place the covered strawberries in the fridge after dipping for a very quick dry time.
  • If your strawberries are very large, you may need more chocolate chips – keep an extra bag on hand!
  • If the chocolate hardens while dipping, you can easily re-warm it on the stovetop (or microwave).
  • Choose firm, ripe, healthy looking strawberries without bruises.
  • Temper the chocolate so that it doesn’t end up with streaks by adding in 1 TBSP of chocolate into the melted chocolate, and stirring in.

How To Make Chocolate Covered Strawberries

Wash the strawberries and let dry completely. Leave to dry for at least 60 minutes or overnight for fully dry fruit. (The chocolate won’t stick well if the strawberries are wet).

Line a baking sheet with parchment paper and set aside 1 TBSP of chocolate chips.

Create a double boiler by adding water to the bottom 1/4 of a sauce pan. Pour the chocolate chips into a small glass bowl that fits snugly into the top of your pan.

Bring the water to a boil, then reduce to a simmer and place the pan, with chocolate chips in it, on top of the pot.

Stir continuously until chocolate chips melt. Remove the chocolate from the heat, and add in the remaining chocolate chips and stir until melted.

Top tip: If you’d like to use a microwave instead of a double broiler, simply microwave the chocolate at 30 seconds intervals, stirring between each interval.

Dip the dried strawberries, one at a time, into the chocolate. Twist the strawberry so it is covered in chocolate, as high up to the stem as you can. Let the excess chocolate drip off into the bowl.

Set the strawberries on the parchment paper. When the tray is full, you can set it in the fridge to firm up quickly! Remove stems if desired.

Variations

  • Roll the ends of the strawberries in crushed Oreos, nuts, or sprinkles
  • Drizzle dark chocolate or melted white chocolate over the strawberries

How To Store Strawberries

This delicious treat is best enjoyed fresh, but you can store strawberries, uncovered, in the refrigerator for 24 hours.

If making a few hours ahead, keep these chocolate covered treats in a cool location prior to serving, avoiding direct sunlight or heat.

  • 12 oz semi sweet chocolate chips (2 cups) Use high quality like Ghirardelli

Instructions
 

  • Make sure the strawberries are completely dry before starting the recipe- chocolate will not stick to wet berries!
  • Line a baking sheet with parchment paper and set aside 1 TBSP of chocolate chips to be used to temper the chocolate.
  • Melt the chocolate in a double broiler or in the microwave, stirring at 30 second intervals. See blogpost for details on creating your own double broiler.
  • Remove the chocolate chips from the heat and add in the remaining 1 TBSP chocolate chips, stirring well.
  • Dip the dried strawberries, one at a time, into the chocolate. Twist the strawberry so it is covered in chocolate, up to the top of the fruit. Let the excess chocolate drip off into the bowl.
  • Set each strawberry on the parchment lined baking sheet to dry. You may place the whole tray into the fridge for a faster dry time.
  • These strawberries are best enjoy fresh, but you may keep them in a cool, dry place- or in the fridge, for up to 24 hours.

Notes

  • The chocolate will not stick to wet strawberries. Make sure the strawberries are completely dry before dipping in the melted chocolate!
  • If your strawberries are very large, you may need more chocolate chips – keep an extra bag on hand!
  • If the chocolate hardens while dipping, simply warm it back up, stirring continuously. 
  • Choose firm and ripe strawberries without bruises.
  • Temper the chocolate so that it doesn’t end up with streaks by adding in 1 TBSP of chocolate into the melted chocolate at the end, and stirring in.
