Bird’s Nest Cookies Recipe (No Bake)

For these simple Easter cookies, you only need four ingredients: chocolate chips, butterscotch chips, Cadbury mini eggs, and crunchy chow mein noodles.

Ingredients:

  • 12 ounces semi-sweet or dark chocolate chips
  • 12 ounces butterscotch chips (sub peanut butter chips if desired)
  • 10 ounces Chow Mein Noodles:  You can find these in most grocery stores or in specialty Asian markets
  • 36 Mini Cadbury eggs: These are available for sale in most supermarkets before Easter. You can substitute jelly beans or other chocolate eggs if desired.

How To Make Bird Nest Cookies

This spring dessert is a joy to make; it’s simple and fun to make with kids.

First, Line a baking sheet with parchment paper or wax paper. 

Step 1: In a large bowl, melt the semi-sweet chocolate chips and butterscotch chips. Microwave for 30 seconds at a time, then stir with a rubber spatula. The mixture will melt in 2-2.5 minutes. 

You could also use a double boiler to melt the chocolates if you do not have a microwave. 

Step 2:  Dump the Chow Mein Noodles into the melted chocolate.  Mix well with a spatula. 

Step 3:  Create the bird’s nest by scooping two tablespoons of the chocolate mixture onto the baking pan.  Use your hands to create the shape of a bird nest.  You can make these as rounded or loose as you like- my kids were helping, so ours ended up pretty casual! 

Top tip:  Use the back of a spoon to help shape the cookies, this will keep your hands cleaner!

Step 4:  Add three mini Cadbury eggs to the bird nests and push them down slightly so the eggs stick.  When finished, stick the tray into the refrigerator to help the cookies firm up. 

Then, peel them off the tray when ready to eat!

Substitutions

  • Substitute any chocolate mini eggs for the Cadbury variety. 
  • If you love peanut butter, substitute one cup of creamy peanut butter for the butterscotch chocolate chips. 
  • Throw in one teaspoon of vanilla extract for a little added flavor.

Storage

Store this Easter dessert in an airtight container.  They will stay fresh for 7 days. If temperatures are warm, keep them in the fridge to prevent melting.

Bird Nest Cookies For Easter

An easy, NO BAKE bird nest cookie recipe with just four ingredients. Featuring semi-sweet chocolate, crunchy noodles and Cadbury eggs, this is a sweet Easter dessert that will delight your guests.

Ingredients
  

  • 12 oz semi sweet chocolate chips
  • 12 oz butterscotch chips
  • 10 oz chow mein noodles (dry)
  • 36 mini Cadbury eggs or other candy eggs

Instructions
 

  • Melt the chocolate chips and butterscotch chips in a large, microwave safe bowl. Heat for 30 second intervals, stir with a spatula, and heat again until the chocolate is completely melted.
  • Stir the chow mein noodles into the melted chocolate mixture.
  • Line a baking sheet with parchment paper. Scoop two tablespoons of the cookie dough onto the parchment paper. Form into a nest shape, then top with 3 candy eggs. Repeat the process for the remaining cookie batter.
  • Let the cookies firm on the countertop OR put them in the fridge for an hour to firm them up. Enjoy!
