Featuring a slight crunch on the outside, this soft and chewy snickerdoodle is perfectly baked! This old-fashioned cookie recipe is easy to make and mouth-wateringly good.
Preheat the oven to 375 degrees and line a baking sheet with parchment paper.
Combine the flour, baking soda, salt and cream of tartar in a large bowl. Whisk very well.
In a separate large bowl, cream together the butter, eggs, sugar and vanilla.
Add the dry ingredients to the wet ingredients and beat on medium speed until all ingredients are combined.
Mix 3 tablespoons of sugar with 1 tablespoon cinnamon in a small bowl.
Use a tablespoon to create rounded balls of cookie dough.
Thoroughly roll the balls of dough into the cinnamon mixture.
Space the cookie dough balls 2-3 inches apart on cooking sheet.
Bake for 8-10 minutes or until the edges are firm but the center is still a little soft.
Let rest on cookie sheet for 3-5 minutes after baking, then transfer to a wire cookie rack.
Notes
For soft cookies, remove them from the oven when the edges are still soft. As the cookies finish cooling they will firm up but still remain soft and chewy in the middle!
