Sourdough Discard Granola Bars (Chocolate Peanut Butter)

These sourdough discard granola bars beat the store-bought version hands down! These chewy granola bars combine rolled oats, creamy peanut butter and decadent chocolate for a delicious bar your whole family will love!

Equipment

  • 1 Large Mixing Bowl
  • 1 Spatula
  • 1 9x9 or 9x11 pan
  • Parchment paper

Ingredients
  

  • 1/4 cup butter
  • 1/4 cup peanut butter
  • 1/2 cup honey
  • 1/2 tsp salt
  • 1/2 cup sourdough discard flat, runny
  • 1 tsp vanilla
  • 1/4 cup brown sugar light OR dark works
  • 3.5 cups rolled oats
  • 1 cup miniature chocolate chips
  • 1/2 cup chopped peanuts optional

Instructions
 

  • Preheat oven to 325 degrees F.
  • Melt the butter and peanut butter in the microwave and mix together. Dump into a large bowl. Add the honey and salt to the mixture and mix well.
  • Add the sourdough discard, vanilla, brown sugar, and rolled oats into the honey-butter mixture. Mix very well with a spatula.
  • Pour the mini chocolate chips and chopped peanuts (if using) into the granola mixture. Stir until well incorporated.
  • Bake for 25 minutes. Remove from oven and let cool slightly. Then remove the bars by lifting out the parchment paper. Set in the fridge to chill for 1-2 hours.
  • If desired, melt some chocolate in the microwave and drizzle over the bars.
  • Cut the bars into twelve equal portions. Enjoy!

Notes

  • Make sure to chill the bars for at least two hours for easy cutting.
  • You can reduce the amount of honey if you wish, the bars will be a little bit more crumbly. 
  • Add your favorite mix-ins as desired: you can use dark chocolate chips, pecans, pumpkin seeds, or almonds.  
  • If you prefer, melt the butter and peanut butter on the stovetop rather than microwave.
